Veggie Burger and Coleslaw
Today is my 21st day at 100% raw. I am enjoying my food a lot and today I had grapefruit and bananas for breakfast. I had a spinach salad for lunch, grapefruit for a snack, guacamole and carrots for another snack. For dinner tonight I had these raw veggie burgers (zero nuts used by the way, only veggies!) and coleslaw. I have wanted to try making a raw burger because it is something that I have never done. I really do like the way these tasted. However, I wish I had some ripe avocados and some tomatoes to go on top. I am noticing some nice changes being 100% raw low on the nuts. My face is much clearer compared to when I eat a lot of nuts. Over Christmas break I was eating so many of my holiday Christmas cookies and started to break out a lot from overdoing the nuts. My hair is not oily like it usually is. I normally have to wash it everyday and I can go a day without washing it now without it being grossly too oily. I am about five pounds lighter and feel like I am at my perfect weight. Those are the biggest differences I have noticed from 100% raw. I can tell my body does function better eating this way and I think that if I continue I will only keep seeing more improvements in my body. I have a picture of myself at the bottom that was taken tonight after I took the foods pics :-).
Veering off the raw food topic today was acro yoga play day at my friend Todd's. He has converted his bedroom into a circus type studio practically with silks hanging from the ceiling and a new trapeze that he just put up this week. We go over and play, sharing and teaching each other new acro yoga moves, trapeze moves and silks. I really enjoy getting to do this every week and enjoy spending time with the great people who come to play. I was there from 12 until 5 pm, went straight to teach yoga and then home to eat and now publishing this post. On a side note I really wish these were better pictures. I prefer taking pictures during the day because the sun helps so much with the lighting to make beautiful pictures. Anyways, have a great evening everyone.
Veggie Burger Recipe:
1 bell pepper
2 tbsp cumin
1 tbsp coriander
1 tbsp sea salt
1/8 cup of sesame seeds (you can leave these out if you prefer)
Directions: Combine all of these ingredients into a food processor and mix until thoroughly combined. Form them into patties and place on the dehydrator trays. Set the temperature to 115 degrees and leave them in for seven hours. Serve them on collard leaves and garnish with anything you like! Hope you like this recipe!
