I have to admit that Kale is not my favorite green of choice to eat. I prefer romaine lettuce which has a milder taste. However, I know that Kale is high in calcium and iron and so I make a point to buy kale at the grocery store every week. This salad is tasty and I have found that if you can create a delicious dressing the kale is more than tolerable. Something else I will do to sneak kale into my diet is make green smoothies with it. When i make the smoothie I add about 30 - 40 % kale and 60 - 70 % fruit. One thing I have not tried is making kale chips. I have seen so many pictures of them on the Internet but I am yet to try them for myself. Have you made kale chips? If so, how did they turn out?
In other news I am excited about this weekend. On Friday night I am going to a musical about nuns and on Saturday night I am going to a birthday party.
Ingredients: 10 kale leaves, 1 tomato, 1 avocado, 1 zucchini, tbsp organic olive oil, 1 tbsp honey, 1 tbsp balsamic vinegar, sea salt to taste
Directions: Finely cut up the kale leaves and tomato and place into a large bowl. Use a vegetable peeler to make noodles with your zucchini. In another bowl mash up the avocado. Mix all of your ingredients together in a large bowl and add the olive oil, vinegar, and honey on top. Enjoy your greens!
