Eggplant Pizza and Free E-Book Giveaway!















Sometimes life does not always turn out the way we plan it!  What was supposed to be an eggplant ravioli recipe turned into eggplant pizza!  I got the ingredients for eggplant ravioli from the blog what the hell does a vegan eat. However, I had small eggplants and I didn't feel that the ravioli idea would work with the ingredients I had.  So, I decided to improvise and make eggplant pizza instead.  I have made a similar recipe in the past and I really like the way eggplant tastes in the dehydrator.  I really liked the end result of this pizza.  By the way, don't you like the title what the hell does a vegan eat?  I think it is clever, I know that every time I tell people I am a vegan that the exact thought runs through their head, although they may not say it out loud.
In other news, I tried a recipe for zucchini corn cakes that I made yesterday.  Those did not turn out well and I ended up throwing them away.  I mostly did not like the way that they tasted.  I think I prefer corn completely raw (not dehydrated) or cooked.  I don't like the way it tastes in the dehydrator.  Lesson learned and sorry no pictures.  Sometimes my experiments in the kitchen turn out and sometimes they don't.
In other news, I am working on my first knitting project and am very excited.  I am knitting a fancy twirly scarf.  I am excited to see the end result!  If it turns out the way I like I would love to knit a host of projects including scarves, socks, hats, etc.  I know what friends and family will be getting for Christmas presents this year!

Eggplant Pizza Recipe:
Ingredients:
1 eggplant
2 tbsp olive oil
1 tsp sea salt
1 cup of cashews
1/4 cup of onion
1 garlic clove
1/4 cup of water
sea salt to taste
3 tomatoes
fresh basil to garnish
Directions:
Slice the eggplant very thin.  You need around 15 slices so you may have some left over.  In a bowl mix the eggplant with the olive oil and sea salt.  Let that sit for an hour.  In the vitamixer combine the cashews, onion, water, and garlic until you get a smooth texture.  To assemble the pizza evenly put the cashew cheeze on all pizzas and top with tomato slices.  Put these in the dehydrator at 115 degrees for 7 - 8 hours.  When they are done garnish with fresh basil on top.  Enjoy!

I have eggplant, garlic, basil, and tomatoes from the farmers' market in the fridge right now, so thanks for the pizza idea!
I am a teacher and always take my own lunch. I have to be careful with what I choose to eat so that I don't feel too stuffed or heavy for the rest of the school day. I would love to see an E-Book with basic quick lunch ideas. Thanks!

There are soooo many e-books/books on Raw recipes/lifestyle. How about this? Your experiences on sharing your recipes with others and how the react. Not only you share your recipes but inputs and how you inspire others... Heck, do even include pictures of how they respond when they taste your yummy dishes!

I'm a Raw-Vegan Chef myself and I'm in process of writing a book myself... Go for it!~

Thanks for sharing that recipe! I have just purchased a dehydrator so this is perfect, and with that in mind I'd love to see an ebook on dehydrator recipes :-)

Personally, I like your eggplant pizza better than the ravioli. What could have been a mess, turned out to be a success. That should be the topic of your next ebook. It should be recipes that started out as one thing, but ended up as another.

This recipe looks amazing!! I'd like to try it, but I don't have a dehydrator. My suggestion is a book for raw-food beginners without dehydrator! :) Thanks for the good recipes!

Or you know what?? I know it's not winter yet, but I would be kind of cool to have a book with recipes and ideas for winter... I'm a just a beginner, and I'm afraid of the winter! LOL

what a clever idea, I love this recipe. I adore eggplant and also LOVE the way it tastes dehydrated. I also love that this is a raw pizza recipe that doen't require a nut crust, the nuts in the cheeze will be plenty--love that it is higher in veggies than nuts.

Consu - Very true. Many newbies don't have dehydrators. I thought about trying half of these in the oven and half in the dehydrator. I will keep that in mind. Also, like the winter idea.

Thanks for sharing this recipe it's definitely a really good reward for my brother who got his Food Safety Training last week. But still work on the dough first. I'm not really the cook-type but I'd like to do something special for him.
