Dinner to go

I made zucchini noodles with carrot slices and topped it all with a nice honey mustard vineragette dressing. I also made some guacamole and fresh salsa. I made cucumber juice for my beverage. The farmers market I go to has had such a great deal or organic cucumbers lately. Like 75 cents a pound and it is normally like two dollars a pound. I usually put my veggie juice in a jar about this size and drink anywhere from 3-5 of these per week. Sometimes I bring it with me to work for breakfast.

  4. Hey April! I haven't talked to you since My space I think, I'm not on there anymore, I decided to put my focus more on eating raw. How are things with you? I still plan on making it to Atlanta one day, but we're still trying to finish our remodel. I hope we can still meet up sometime this year!:) xoxo Melinda

  5. Hi April, Got any book recommendations? Ones that have inspired you, and/or that explain why going raw is the best health choice out there. BTW, those dishes look tasty and simple. Mind sharing your guacamole recipe?

Melinda - it is great to hear from you! I always enjoyed talking w/ you and we should definitely meet up!
Michael - Raw Food Real World is by far my favorite raw food recipe book and I also love a lot of the raw recipes on gliving.com! They all look great as well. For my guacamole, I just had onions and jalapenos with avocado and it is delicous!

  8. Hi April! I just had one comment and one question:
For the comment, I just wanted to say thank you for posting about your Hawaiian retreat this Spring- my husband and I have contacted the place and we are going in June and July- thanks for the great idea!
And for the question: I love fresh fruit juice but every vegetable juice I've tried (with the exception of carrot mixed with lots of orange) has not been very tasty. In fact, I had some this morning that was made of celery, lemon, apple and radish greens and it almost made me throw up (and I mean that VERY literally). Do you have some better combos or veggies to suggest that would be good for someone like me? I love veggies...just not the juice....yet!
    Thanks!
    -Alyssa

Dale and Alyssa- that is sooooo awesome you guys are going to hawaii in june! I am so happy for ya'll! Also, as far as juice goes my favorie recipe is cucumber and celery and if you need something sweeter you can add apples to it or some other fruit.
