Coconut Banana Mango Smoothie

I hope that everyone had a great Saint Patrick's Day yesterday. I planned on making a green smoothie and posting about it...but instead I made this coconut mango banana smoothie. I have been drinking a lot of green smoothies this week. I have had one for breakfast every day and then some days I have another one for lunch or for dinner. Honestly this week I have not tried as many new recipes out. I haven't had as much free time to play around in the kitchen. This coconut banana mango smoothie is really delicious and I do suggest that everyone try it.
On to other news, this weekend is my dad's birthday. We have some family coming down from Chattanooga to help us celebrate and some friends and family from the area are joining us as well. Tomorrow we are going out to eat for lunch at a restaurant called Cafe Sunflower. It is a vegan / vegetarian restaurant with delicious gourmet food and a very nice atmosphere. One problem that I often have with vegetarian restaurants (at least in the Atlanta area) is that they are not very nice inside. Cafe sunflower is very classy looking inside and it just provides for a more relaxing atmosphere. Around 6 pm everyone is coming to my place for dinner and birthday cake. I am going to make a lasagna (it won't be raw but will be vegan). I will actually be using the exact same recipe that I use for my raw lasagna but I will be putting it into the oven so I will let you know how that experiment turns out. I am also making a strawberry birthday cake which I am excited about, with vanilla icing. I will be following a similar recipe to my chocolate cake recipe just minus the chocolate.
Today, I will be working in the kitchen a lot preparing all of the food for tomorrow. I am going to make the cake today and prepare the lasagna so that tomorrow all I have to do is stick it into the oven. Coconut Banana Mango Smoothie:

Ingredients: 1 young thai coconut, 2 frozen bananas, 1 mango

Directions: Put everything into the blender or vitamixer and blend until creamy and smoothie. Garnish with a strawberry and enjoy!

  3. yummy looking smoothie. I still can't believe that I have not used a young Thai coconut in any of my raw recipes!! I really need to buy one.
