Key Lime Tarts and a Short Post


















These key lime tarts are a nice end of summer dessert!  They are light, sweet, creamy and delicious!  I hope you enjoy the recipe and have a wonderful labor day weekend!  I am going to be driving to Washington D.C. this weekend and am looking forward to it!  I hope to try out a vegan restaurant in Washington D.C so if you know of a good one let me know!  Meanwhile, enjoy!

Key Lime Tart Recipe:
Crust Ingredients: 1 cup of ground flax seeds, 1 cup of dried shredded coconut, 1/4 cup of honey, 1/8 cup of water. 
Directions for Crust: Mix the ingredients together until sticky and clumps together.  Press into the bottom of miniature pie pans or into one large pie pan.

Key Lime Filling: 1/2 pound of young thai coconut meat, 1/2 avocado, 2 limes, 1/4 cup of honey.  Blend all of the ingredients together in a vitamixer and when well combined pour into the pie pans.  Garnish with limes and put in the fridge for several hours to set.  Enjoy!

  1. This looks better than the Key Lime tart I made!! Mine had too much avocado and was weird to me. This looks like more coconut and sounds delicious!

  2. This is really funny, my husband just picked about 10 key limes from our tree and we just got back from DC. I just posted our pics, you'll have to check it out. There are soooo many places for vegan, raw and vegetarian diding. You will not have a problem. One great place is Sweet Green on Pennyslvania St.

  3. Get Skinny - Thank you. In the past I have tried making it exlusively with avocado and I had trouble getting rid of the avocado taste. This time I added just enough avocado to help turn it a green color. They are tasty.
