Simple Salad Dressing: Apple Cider Vinegarette

A good salad dressing can make all of the difference between an enjoyable meal and a not so enjoyable meal.  I personally love vinegarette dressings.  They are light and simple and add just enough flavor to create a delicious and satisfying meal.  Lately I have been eating a lot of salads.  I have been chaning things up a bit though by adding fruit to my salads, which is something I haven't really done in the paste.  This week I can't seem to get enough bananas in my salads.  This was my lunch today and I was quite full after I finished.
My brother is the one who got me hooked on using apple cider vinegar.  We went grocery shopping together and he got some and stuck it into my cart.  He is twenty one years old and health conscious, which I think I may have had something to do with.  He is not a vegan or vegetarian but he does buy organic meat, buys local vegetables from a farmer and composts his leftovers.  I must say I am proud of my little brother.  At his age I was not aware of what I was eating.  So, thanks to him I have this delicious tasting salad dressing.  If you try the recipe let me know what you think!  What is your favorite salad dressing to use?

Apple Cider Vinegarette Dressing:
2 tablespoons of olive oil (virgin, organic)
1 tablesppon of apple cider vinegar
1 tablespoon of honey

Directions: Whisk the ingredients into a bowl and then pour onto your salad.  Enjoy!
