Banana cookies with fresh squeezed orange juice...


So, this morning I had some fresh squeezed orange juice with some banana cookies. I love making fresh orange juice, I am spoiled now and wouldn't consider drinking anything from a box at the store, I only like it fresh. I know I am getting so much more nutrition when I make my own orange juice and it only takes a second to do. I use about four oranges to get a fulll glass. Right now I buy oranges in bulk. They cost me $5.99 at the farmers market for a 10 lb bag of organic oranges and it lasts me all week! I have a wonderful handy citrus juicer that I got for $10.oo at Target. So, all i do is cut the oranges in half and press the half onto the citrus juicer and it spins itself getting all of the juice out!
The banana cookies are light, not too sweet but pretty tasty. They kind of taste like banana bread.

Banana cookies recipe: 1 cup of cashews
4 cvps of coconut pulp (i buy it dried at the farmers market)
3 bananas

First put the cashews and coconut pulp into the food processor and process until you get a fine pulp consistency. Next, I add the bananas and process until everything is smooth. Finally I roll the dough into cookie formations and place them into the dehydrator at 115 degrees for about ten hours. Then, you are done and you can enjoy them :)
