Chocolate Coconut Layers of Delight...



There was supposed to be a potluck today at Sunshine's house but she was sick. Hope you feel better Sunshine :)! I decided to make the dessert that I was going to make for the potluck anyway. It is very good with a layer of creamy coconut goodness topped with a layer of chocolate ecstasy. Let me know if you try this recipe out. On a side note I want to start juicing vegetables every day and drinking one green smoothie a day.

Chocolate coconut Layers of Delight!

Crust:
1 cup of almonds
2 cups of dried coconut
1 cup of dates
1/2 cup of raw chocolate nibs

Coconut filling:
3 cups of raw cashews
1 cup of coconut meat
1/2 cup of coconut water
1/8 cup of coconut butter
1 cup of agave nectar

Chocolate Filling:
1 cup of raw cashews
1 cup of raw chocolate nibs
1 cup of agave nectar
1/2 cup of coconut water
1/8 cup of coconut butter

*To make the crust put almonds, dried coconut, and raw chocolate into the food processor and mix until ingredients are ground finely. Then add the dates to the food processor and mix until the dates are well combined.
For the coconut filling place the ingredients for the coconut filling into the vita mixer and mix until smooth and creamy. Next make the filling for the chocolate layer in the vita mixer until smooth and pour the layer on top of the coconut layer. Place the pie in the freezer and allow it to set. Then eat it and enjoy!

    I made some on Friday for a birthday cake for my Dad ..but it was a Chocolate Cream Cake with just one layer..
    It was lovely... but yours look sooooo SUPER YUMMY-licious..must try it out!! =D

    Well...and the LEMON PUDDING you made some time before ..it sounds also SOOO YUMM!! And simple!! I don't have a coconut on hand but I'll substitute some macadamias and I have a carton of coconut water to use up!! Soo I think I'll try it out tomorrow!!! =DDD
