Chocolate Banana Pudding!





So today is my second day eating 100% raw minus the nuts! It has been going quite well actually. I have been making green juices, today I made celery, parsley, and apple juice. It was quite tasty. Just sweet enough to drown out the bitterness of the parsley. I had a large kale salad with an avocado on top and honey drizzled on top of that. Besides that I have been grazing on grapefruit, apples and bananas pretty much eating until I felt satisfied :-). Tonight I made a chocolate banana pudding (since I am cutting out the nuts I made a pudding dessert instead of a pie). I am not digging into this until tomorrow because I want it to set but I confess I licked the vitamix and it tastes pretty darn good.
So I want to talk about some things I have noticed eating this way. I notice that I am filling up eating fruit rather than trying to fill up eating nut based foods. I actually am feeling completely full and satisfied too. I have noticed that my skin is clearer and my hair is not as oily. Seriously, every morning when I wake up my hair is usually oily enough that I feel I have to wash it. Today when I woke up I noticed that it wasn't oily and if I didn't wash it, it would still be fine and clean. That is awesome to me because honestly what girl doesn't want good hair? I just notice my hair is healthier and less weighed down eating this way. This is only two days of eating this way and I am already noticing positive changes. I don't know that at the end of this month I will completely cut out nuts but I definitely was eating way too many. I may even guess some days I was eating 3/4 of my diet in nuts. Anyway, I am going to be making a lot of puddings this month because I still have to have my desserts you know! Oh, in this last picture I am drinking the coconut water leftover from the coconuts I used in this recipe. I love coconut water! So yummy!!!

Chocolate Banana Pudding

3 Avocados
3 Bananas
1/4 cup of honey (add more or less depending on how sweet you like it!)
1/4 cup of raw chocolate
*Mix these ingredients together in the vitamix or blender. In a blender you may need to add some water to get it to mix together. When creamy and smooth, spread the pudding into a dish.

Whip Cream Topping:
Meat from 2 young thai coconuts
1/4 cup of honey (again more or less for your tastes)
*Mix together in your vitamixer. Mix until it is creamy and spread it on top of the chocolate mixture.

*Garnish however you like. I used one banana and cocnut flakes! Enjoy! Cheers!

  1. Great recipe! I would love to try it, but are young coconuts hard to find or hard to open? I am sort of scared to use a fresh coconut. :/

    I am transitioning into a raw vegan diet, from being a vegan for about 4 months now. I am extremely excited and ready for this positive change. (Especially for my digestive system!)

  2. I've explored raw eating just a very little bit, and I have a question that I hope you can help me with. What are your thoughts on yogurt? Greek yogurt? Why don't you eat it (well, I guess I'm assuming here)? Is it the dairy? Is it because they have to heat it - especially if it's pasturized? I've always thought that yogurt would be a good for you food because of the good bacteria. Anyway, I'd appreciate any comments you have. Thanks so much. Your blog is really neat. It's changed my concept of "raw eating".

    I live in Atlanta and buy my young thai coconuts at a farmers market. I am not sure how hard they may be to find for you. Maybe if you have an asian farmers market or something. I have a video on my blog about how to open a coconut. You should try it sometime! Good luck!

    You guessed both of the reasons why I don't eat yogurt, dairy and it isn't raw. I have found the raw food diet to impact my life very positively more so than eating yogurt ever did. Anyways, I wish you luck on your own personal journey as you discover what is best for your own body! So glad you have enjoyed my blog!

  4. I've been eating cherries this afternoon....mmm delicious!!! I personally think it's important to still eat your nuts but like you said cut it down a bit :). Anyhow todays menu sounded yummo!!

  5. Great recipe. I love raw dishes that are 4-5 simple ingredients.

    Interesting insights on cutting out nuts. I've never really thought about my nut dependence before, but a lot of raw food really does heavily rely on them. I made a cashew pudding the other night (that was almost 100% cashews) and I noticed shortly afterward that I felt so heavy and had a hard time digesting it.

    It will be interesting to see what else happens on this nut-less spree!

I'm glad to see you are going to be doing raw minus the nuts... i do a lot of raw recipes for myself and my son but my biggest complain is that many have a high quantity of nuts which i have a hard time tolerating - so i'm sad i miss out on certain recipes. so i'm checking ur blog regularly now to get some raw but nut free recipe and food ideas:) best of luck to you!

  8. Well said re the yoghurt Q April. I totally agree with you but yes it is good to hear a raw foodist/high raw foodist promoting people getting to grip with what is best for them. Some raw'ies can get quite vocal about what you should and shouldn't eat. Yay for you.

    BTW I love love love the combination of Banana and Choc. I just made myself a Banana/Choc Almond milkshake for dinner, just because I felt like it haha. YUM
