Today is my 6th day eating raw again for my 30 day challenge :-). I have done a couple of 30 day challenges so far and posting about them helps to keep me accountable and stick to them. So, last night I went to a party with some coworkers I used to work with. My old boss is moving to Palo Alto and it was a good bye party. I made flax bread with a guacamole dip to share with everyone. That is one way I handle parties. I usually bring my own food with lots to share and then mostly eat my own stuff. Today for lunch I had my cucumber soup that I posted about on Monday, I love that soup! Then for dessert I used my left over flax bread to make this yummy toast. I spread almond butter on it and smashed up strawberries with honey and spread it on top. It is a great snack. In other news I have kept up with my running this week. I ran five miles Monday, Tuesday, Friday, Saturday and will run five miles tomorrow. Then I will have met my goal running 5 miles 5 times per week. I have been waking up at 7 am so I can run while it is still cool outside. It is way too hot in Atlanta to run in the afternoon. My pilates and yoga classes are going well and are really growing a lot. I must say one reason I love teaching those classes is because it helps me to stay in great shape and that is very important to me. Anyways, have a great weekend and try out this yummy snack or dessert!

Strawberry Jam:
1/2 cup of strawberries
1 tbsp honey
Directions: Smash the strawberries with a fork and mix in with the honey. Then spread on whatever you like and enjoy!

I have just posted the recipe for flax crackers under my featured recipes on the side. I also added a link into this post. For the bread you would just leave it in the dehydrator for a shorter period of time (around 7 hours instead of the 10 or longer for the crackers).
ReplyDeleteI'm going to an office party this weekend. It's brunch and it will be my first time sharing raw food with them. Flax crackers and guac sounds good! Or maybe a dessert type dish would be a better introduction... We'll see!
