Tonight I made a dinner for my family to share and enjoy. While I was in Hawaii I had a vegan soup similar to this but it was heated so I was inspired to create a raw version. My taste buds were very happy after sipping on this soup! I also made purple potatoes (not raw but vegan) and spinach souffle which was raw :-). Overall it was a yummy, hearty meal.
Carrot Coconut Ginger Lime Soup:
Ingredients: 2 young thai coconuts
4 limes, 6 carrots, 1 tsp of fresh ginger and sea salt to taste.
Directions: Open the coconuts and scoop out the meat, using the meat and the water. Put all of the ingredients into the vitamixer and blend until smooth. Garnish with a lime and enjoy a colorful meal!

So colorful and fresh! And pretty simple ingredients too. Will def be trying this out!
