Recent Raw Food Eats







Sorry I have been missing in action for the last couple of months. I have missed blogging but haven't had a camera or Internet connection to do either in the past two months. Life in general has been going pretty well for me in Atlanta. I have had some problems adjusting and missing Maui but I am finding pieces of Maui where I am. My new year started off great and has continued to get better and better. I have great roommates, a great boyfriend, great food and my free time is filled with lots of adventures (hiking trips and weekend excursions)! On to the topic of my blog, raw food! I have had some great recipes lately as I have made a commitment to do raw food for the month of February. Last week I had my family over for dinner and I made eggplant pizzettes. These were delicious and lets just say there weren't any leftovers. I made this one time in the past and enjoyed them. The only difference this time is that I added cashew cheeze on top. I also made an orange sorbet topped with a sweet flax cracker. This was amazing and the flax cracker dipped in the sorbet tasted close to an ice cream cone. Finally, I made this blueberry cheezecake. I have made many cheezecakes in my day but the difference with this one is that I made the fancy whipped cream topping with my cake decorating kit. I have been wanting to try out this cake decorating kit for quite some time now and finally did it yesterday. I was very pleased with how this came out! I am thinking of all the birthdays coming up and how I can decorate raw cakes really professionally! I hope you all had a wonderful valentines day! Below I will share my sorbet and sweet cracker recipe!
Orange Sorbet:
2 frozen bananas
1 orange
directions: Mix in the vitamixer until smooth and creamy like a sorbet.
Sweet Flax Cracker:
2 cups of flax
1 cup of water
2 bananas
2 apples
2 tbsp honey
pinch of cinnamon
directions: Soak your flax crackers in water for an hour. In the vitamixer combine the bananas and apples and mix until a smooth consistency. Add this mixture to the soaked flax crackers and mix in the honey and cinnamon. Spread this mixture on a dehydrater tray set at 115 degrees for 15 - 20 hours depending on how crisp you want your cracker!
