Chicken Salad on Onion Bread

I have had more free time this week and it really shows with all of my postings! My mind has been exploding with new recipes that I want to try and I have really enjoyed photo shopping my pictures as I try and make them look as professional as possible. Last night I was reading over some of my very old posts on this blog. I started writing this blog three years ago and I have grown so much since then. When I started writing my blog I was still searching to find myself, I was in a job I did not enjoy, in a negative living environment and just overall not very happy. I knew that raw food was only one answer in my quest to find
true health and happiness. I was right, raw food was important but I also had to go on some journeys (to Hawaii twice, Mexico, the Berkshire Mountains) to learn more about myself and develop the confidence I needed. I also had to learn to find my joy again, improv and acro yoga helped me with that. I had to learn how to have better communication skills so that I could deepen my relationships with other people. Now I am in a place where I feel content,
at peace and happy. I am thankful for that. I know that I still have a lot to learn and a lot more growing to do but overall I am thankful and ready!
Okay, enough mushy stuff and more about food! For my lunches and dinners this week I have been having lots of sandwiches. I made this onion bread and got the idea from websites online raving about this bread! I used my chicken salad recipe that I also used for Thanksgiving and combined them to make a winning combo! I only have a few slices of my bread left so I will probably have this for dinner tonight as well. I have also been using this onion bread to make sandwiches with avocado. I hope

Chicken Salad (raw vegan of course)
Ingredients: 2 cups of cashews, 2 lemons, sea salt to taste, pepper to taste, 1/2 cup of parsley, 1/2 cup of green onion, 1/4 chopped onion, one tomato.
Directions:Use a food processor to grind up the cashews (leave them a bit chunky and course). Pour this into a big mixing bowl and mix in lemon juice and all the other finely chopped ingredients. Stir and combine well together and eat with bread on with romaine lettuce.

Onion Bread:
Ingredients: 2 cups of flax seeds, 1 onion, 2 cups of water.

Directions: Use a vitamixer to grind up the flax seeds into a flour (very fine). In the vitamixer add the water and 1/2 of the onion. Mix until well combined. Chop the other half of the onion fine and stir it in. This should form a dough like consistency. Place in the dehydrator for 10 - 15 hours at 115 degrees. Break apart into pieces and get creative with those sandwiches!
