Chocolate Cake

My room mates and I had a room mate dinner night last night and it was a lot of fun. We decided that every Monday night will have a room mate dinner. I live with three other young professional women, each one moved from another state to Atlanta for work related reasons within the past couple of months. They are a lot of fun to be with, smart, adventurous, and health conscious about food to varying degrees. One of my roomies made a ginger veggie stir fry which was delicious and I whipped together this chocolate cake. It was light and delicious! My roommates enjoyed it as well with cool whip on top of course, but none the less they enjoyed it :-). We followed dinner with playing uno and girl talk. I am so lucky to have such wonderful room mates! I have found a very important part of healthy living to be community and friendships and we definitely have community in our home! We have game nights, girls night out, girls nights in (complete with manicure and pedicures) and we have a cleaning schedule. Luckily I still have half of this cake left and will be snacking on it all week!
Chocolate Cake:
Ingredients: 4 cups of coconut flakes (no sugar added), 3 cups of dates pitted, sea salt, 1 1/2 cups of raw chocolate, 2 avocados, 1/2 cup of honey and strawberrie to garnish.


Directions:
Blend the dates in a vitamixer with some water until they turn into a paste. Mix the dates in a mixing bowl with the dried coconut flakes and add in sea salt and 1 cup of raw chocolate. Mix until thoroughly combined. For the icing, put the 2 avocados in the vitamixer with honey and 1/2 cup of raw chocolate. Mix until smooth and creamy. Press the cake into a pan and spread the icing on top, garnishing with sliced strawberries.

  1. The cake looks yummy - just have a question re: raw chocolate. Is that raw cacao powder - or raw chocolate in solid form?? Thanks for sharing!

  6. This is the best cake I have made yet! The coconut flakes make it lighter than cakes made with nuts!
