Apple Cinnamon Granola

I am totally addicted to flax seeds lately. I buy my flax seeds at the dekalb farmers market in Decatur, GA and I get 4 cups for eighty cents. The price for organic flax seeds are around $2.50 for the same amount so I haven't been buying organic lately. I find them so easy to work with and they taste great as crackers, breads, granola, pizza crusts, etc. Last week I had a bunch of unused apples, almonds and cashews so I decided to try this granola. It is so delicious. The only problem is that it is so addicting to eat, it is hard to stop. My boyfriend loves them, my roommate loves them and I love them. I was at whole foods yesterday and they had raw granola $5.00 for a tiny amount and I made this entire batch for five bucks and mine looks much more appetizing. Anyways, if you haven't gotten a chance to experiment with flax seeds I highly recommend it! The possibilities are limitless!
Apple Cinnamon Granola
Ingredients:

2 cups of flax seeds
3 cups of water
2 apples sliced very small
1 cup of almonds
1 cup of raw cashews
1 cup of raisins
1 tbsp cinnamon
1 tsp sea salt
1 cup of honey

Directions: Soak the flax seeds with 3 cups of water for 1 hour. Mix in the sliced apples, almonds, cashews, raisins, cinnamon, sea salt and honey. Spread evenly over the dehydrator trays and set the temperature at 115 degrees. Leave them in for 24 hours and then enjoy!
