Brownie Bites

Thanks for the comments on my last post and I am healing slowly but definitely surely :-). Last night was Monday which also means room mate potluck night in this household. For dinner we made sushi and I rolled my own using only veggies (carrots, cucumbers and avocado) leaving out the rice. Although the roll did not stay together very well it did taste delicious. I whipped up these brownie bites for my contribution to the dinner. I was not sure how they were going to turn out since I was not following any sort of a recipe but they turned out to be a big success. In other news I am leaving for Mexico in
two days and I am ready to spend some time by the beach relaxing and touring the island. I hope you get a chance to try out this quick and yummy recipe!


Brownie Bites:


Ingredients: 3 cups of dried coconut flakes, 1 cup of dates, 1 tbsp of honey, 2 tbsp of raw chocolate powder, 2 tbsp of coconut butter, bananas to garnish on top.


Directions: Use a vitamixer or food processor to mix all of the ingredients until evenly combined. Press the mixture into a square pan and freeze for one hour. Take it out and garnish with sliced bananas and enjoy!

  1. Hi there! I am new, so I just have a question. Is the coconut butter the same as coconut oil?? thanks:) Can't wait to try these! They sound delicious!

  3. I consider coconut butter and coconut oil to be the same thing. I may be wrong about this, anybody know more? I did not soak the dates.
