Mediterranean Pasta Salad




Wow, it has been a while since my last post! I have safely arrived back home in Atlanta and had a wonderful trip! I have a post coming soon about my trip to Isla Mujeres including details about what restaurants we dined in, the challenges I faced trying to eat raw let alone vegan, and what we did for fun. The first thing I did when I got back into Atlanta was go shopping at the Dekalb Farmers Market to buy LOTS of fresh produce! I have not had zucchini pasta in a long time and the zucchini's were at the market for a great deal so I bought a large amount to make a pasta dish. This pasta salad is great! I hope you get a chance to make it!

Mediterranean Pasta Salad


Ingredients: 4 zucchini, 1 package cherry tomatoes, 1 cup sun dried tomatoes, 1/2 cup of olives, 1/4 cup of olive oil, dash of pepper


Directions: Use a spiralizer to make zucchini noodles and add them to a large bowl. Cut the cherry tomaotes in half, cut up the sun dried tomaotes and mix them in the bowl with the zucchini. Add the olives, olive oil and pepper and let it sit for half an hour. Enjoy this delicious dish!
