I had a great birthday yesterday. I got to spend it with my sweetie. We made dinner together, a delicious lentil soup topped with guacamole and these healthy banana oatmeal raisin cookies for dessert! He got me a nice camera for a present which I love. I am still reading the manual on it so I can use it to its full potential. This weekend I will get to celebrate with friends and family which will be fun! I am very thankful! I got this recipe from a vegan cookbook called Color Me Vegan. I checked it out from the library and really enjoy the premise of the book. She categorizes recipes based on color and encourages readers to eat from the colors of the rainbow. You do need to put these in the oven although I am sure you could also use a dehydrator for them. I have become more open to cooking my food more lately. I realize that my body doesn't digest grains well, including the healthy ones like quinoa. However, I don't seem to have any problem with cooked veggies and beans so I will mix these in with lots of raw salads etc. I especially have been eating more beans lately since they are very high in protein and very low in fat. I make them from scratch and the black bean burgers I made last weekend were a great hit! One of my friends was surprised they didn't contain meat. Anyhow, I must leave for a yoga class so I will post this recipe for you guys to enjoy!
Banana Oatmeal Raisin cookies:
Ingredients: 3 large bananas
1 teaspoon of vanilla extract
1/4 cup of coconut butter
2 cups of quick cooking oats
1 cup of shredded coconut
1 tsp cinnamon
sea salt to taste
1 cup of dates
Directions:
Mix the bananas and dates in a vitamixer until smooth and the lumps are removed. In a big bowl add all other ingredients and stir until evenly combined. Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper. Drop dollops of the dough, each about 2 teaspoons in size on the baking sheets. Press down a bit to flatten them. Bake for 20 minutes or until the cookies are golden brown on the bottom.
These are great. They tasted like banana bread cookies!
What are you use in place of coconut oil? maybe other oil?

Any type of non dairy butter. One example might be earth balance.
ReplyDeletethose look great!! i'll have to try them... missing cookies, so wanna try a cookie recipe soon... all the vegan raw cookies i have found in stores are a bit too much with flavor... so i've decided if i want a sweet, i have to make it myself... thanks for sharing!!
ReplyDeleteI do like this recipe although it does taste more like a banana bread cookie. But I love banana bread. I like this recipe because it doesn't have flour in it. You could try making it in the dehydrator. You would probably have to leave it in there for 10 to 15 hours. Good luck!

I'm a 25 year old girl living in Atlanta too and I'm curious if you have any suggestions of raw groups or settings to meet other people interested in this "movement". I am struggling to find a single person who is interested in my circle of friends.

ReplyDeleteThat is so sweet of you! I don't think Atlanta is the most health conscious place to be but you will be able to find some here! I would go onto meet up groups. I used to go to a lot of meet up groups! Look for raw food and vegan/vegetarian groups. Good luck!
