Kale Salad
I have to admit that Kale is not my favorite green of choice to eat. I prefer romaine lettuce which has a milder taste. However, I know that Kale is high in calcium and iron and so I make a point to buy kale at the grocery store every week. This salad is tasty and I have found that if you can create a delicious dressing the kale is more than tolerable. Something else I will do to sneak kale into my diet is make green smoothies with it. When i make the smoothie I add about 30 - 40 % kale and 60 - 70 % fruit. One thing I have not tried is making kale chips. I have seen so many pictures of them on the Internet but I am yet to try them for myself. Have you made kale chips? If so, how did they turn out?
In other news I am excited about this weekend. On Friday night I am going to a musical about nuns and on Saturday night I am going to a birthday party.
Kale Salad
Ingredients: 10 kale leaves, 1 tomato, 1 avocado, 1 zucchini, tbsp organic olive oil, 1 tbsp honey, 1 tbsp balsamic vinegar, sea salt to taste
Directions: Finely cut up the kale leaves and tomato and place into a large bowl. Use a vegetable peeler to make noodles with your zucchini. In another bowl mash up the avocado. Mix all of your ingredients together in a large bowl and add the olive oil, vinegar, and honey on top. Enjoy your greens!
kale chips are amazing! I highly recommend them! i prefer the cheesy version which you can find almost anywhere like goneraw. instead of cashews I use hemp seeds.
ReplyDeleteraw kale is yummy when it's been massaged really well with olive oil, until it wilts. then mixed with fresh herbs, lemon juice and avocado - yummy!

ReplyDeleteI have tried kale chips several times. They always turn out the best when I use larger pieces of organic kale and give space between the pieces. Smaller pieces seem to get soggy.

Kale chips are delicious (and for me, addictive)! I make them the same way I make my super fast (aka lazy) kale salad - massage in olive oil, nutritional yeast, and a little salt. The ones I've tried in the store are good, but nothing like homemade! :)
ReplyDeleteI eat kale chips like I used to eat potato chips. I don't dehydrate them, though. I break up the kale into bites, wash it, and toss in a bowl with lemon juice, olive oil and sea salt then sit down with a smile on my face :)

ReplyDeleteZen - I am pretty sure I would want to dehydrate the kale chips but I admire the purity of eating them so simply. If it satisfies your craving for chips then that is great!
Yes. Kale Chips rock and there are a gazillion recipes on the web for any flavor. I take the stems off, and they get super crispy. If you can grow your own, you've got endless junk food!

ReplyDeleteThat's so cool that you cut zucchini noodles to put in your kale salad. I don't think I've ever seen a kale salad with zucchini noodles running through it.
