Summer Vegetable Soup



















Unfortunately I have been under the weather this week! I realize that it has forced me to slow down and to remember to take care of myself. I have been eating very simple foods and drinking lots of water to recover. I have been eating a lot of veggie soups whipped up in my vitamixer. They are quick and easy to make which gives me more time for resting. Also compared to cooked soups they retain all of their nutrients, vitamins, minerals, and enzymes. All of the vegetables I used in this soup were either from my garden or were locally grown here in Georgia. Although I don't enjoy being sick it has helped me to step back and take a look at my life and see what things are working and things that may need to change in my life. I go on and off eating a high amount of raw food to eating 100% and sometimes I feel that my health is compromised as a result. Finding a balance that is right for me is a continual process. Summer Vegetable Soup:

Ingredients: 1 large tomato, 1 cucumber, 1 bunch of basil, 1 avocado, sea salt to taste

Directions: Chop the tomato and cucumber into large sections, add them to the vitamixer along with the avocado, basil and sea salt. Pulse until well combined but still slightly chunky. Enjoy!

Side Note: If you don't have a vitamixer I am not sure how a regular blender would work with this recipe. If you have used a blender to make raw soups let us know so I can let my readers know! Thanks!
