Pear Cobbler


















Pears are in season and I had more than I knew what to do with.  In the past I have made apple cobbler and peach cobbler, so I decided it was time to make a pear cobbler.  I won't be eating this until tonight but I know it is going to be yummy!  In other news, I have found my new cardio workout of choice.  There is a stationery bicycle in our basement and for the last two weeks I have been doing 30 minutes on the bike 4 -5 days out of the week.  I resisted doing the bicycle because for some reason I did not think it would be a good work out.  It turns out that I was wrong about that.  It really is a great workout!  During the 30 minutes I am breathing very deeply and at the end I am dripping in sweat.  We moved the bike in front of the television and I will pop a movie in for 30 minutes and the time flies.  Then, I continue the movie the next day when I hop on to the bike.  Although I teach yoga full time I think it is very important to get some vigorous cardio into my day as well.  What is your favorite form of cardio?

Pear Cobbler:
6 pears peeled and diced
1 pear peeled and sliced (for the garnished topping)
1 cup of dates
1/2 cup of water
2 cups of coconut flakes
sea salt to taste
1 squeezed lemon
2 tbsp of honey
1 tbsp cinnamon

Directions: Put the diced pears, honey, cinnamon, and lemon into a mixing bowl.  Once it is well combined pour the mixture into a pie pan.  Place the dates and water into a vitamixer and mix until you have a date paste.  In another bowl add the date paste, coconut flakes, sea salt, and cinnamon.  Place this mixture on top of the pears and garnish with the sliced pears.  Sprinkle the top with cinnamon and honey and enjoy!
