Tonight I made a raw manicotti. I got the recipe from the G Living website. It tasted fairly good, I might have to somehow tweak it next time though. Not sure how yet. The pasta wrap is made out of zuchinni noodles. The "cheese" filling is made out of cashews, basil, garlic, onion, oregeno, and spinach. The tomato sauce is just tomatos and onions chopped up and spread on top.
