Chocolate Mint Pudding....mmmmmmmmmm
Since I have gotten back from Kripalu I have been getting back into my raw routine pretty nicely. I went to the Dekalb Farmers Market on Monday and bought tons of fruits and veggies and spent $60. I bought coconuts, satsumas (delicious type of tangerine), grapefruit, pink lady apples, avocados, celery, spinach, kale, mint, green onions, bananas, and honey! So delicious! I made this chocolate mint pudding today and plan on digging into it tonight or tomorrow. From what I licked off of the vitamixer it is a true winner! In the second picture here you can see the mint layer on the bottom:-). I am thinking of making this for christmas.
Since getting back I have been teaching yoga, going to improv, and hanging out with people. My yoga teaching schedule will be slowed down until college classes start up again. Meanwhile I am going to try and study more about yoga, try and get more yoga jobs, and have fun. Lately I have had a strong urge to learn how to crochet so I hope to get some lessons from a friend of mine.
Yesterday I went on a mini shopping spree buying some gifts for family members and then buying some clothing for myself. I haven't been shopping for clothes in such a long time. I went to Ross and bought some jeans and two flannel shirts (they seem to be in right now). Then, I went online and bought some organic yoga clothes for myself. I really want to start buying organic clothing for the most part and going online is a great way to do it when looking for affordable organic clothes. Right now under the canopy has qutie a few clothing and bedding items on sale. I had to hold myself back from buying too much, I spent about $100 and got some nice things. On another note I am thinking of coming out with a new raw food recipe e-book so stay tuned to find out more about that! Meanwhile enjoy this simple, easy and nutfree recipe :-).
Chocolate Mint Pudding:
Mint Layer:
3 cups of coconut meat (I used three coconuts to get this much)
1/4 cup of honey (more or less depending on your preference)
1 cup of fresh mint (more or less depending on your preference)
Directions: Place all ingredients in a blender or vitamixer and blend until completely mixed and smooth!
Chocolate Layer:
3 avocados
1/4 cup of honey
1/4 cup of raw chocolate
Directions: Place all ingredients into the vitamixer and blend until smooth and creamy!

ReplyDeleteAre you serious right now!!?? I am making this tomorrow or the next day for sure! I looove pudding but never eat it because of all the crap that mixes have added in them. Super excited!!!! =)
