Mango Avocado Spinach Wraps for Lunch



Thanks for all of the encouraging posts for my last entry on before and after pictures. I have so many more before pictures where I look so different than I do now. It reminds me how important eating raw food is. Today is my 26th day eating 100% raw food high in fruits and veggies and low in the nuts and seeds. This week at the Farmers Market I got a great deal on mangoes, only $3.50 for a box of 12. So, to say the least I have a lot of mangoes to eat this week. I just came from teaching two yoga classes this morning and have the afternoon free until my two classes tonight. It is really nice outside and I am considering taking a walk with my dog. So in my last post I talked about my problems with living at home, well I am currently looking around for a place to move out and think I may have just enough money to do this so wish me luck finding the right place for me. This weekend I am having a very mini party to celebrate my 30th day eating 100% raw food. My friend Marie-Lies is hosting it at her home in Atlanta and I am providing the food. It is going to be a pizza party so I will make my favorite pizza recipe and I am also going to try and make a nut free version so watch for that :-). I am planning on making ani phyo's chocolate raspberry cake but that may change, and I am going to make a nice salad with avocado dressing. Most of the people coming are not raw or even vegan and so they are curious about the taste, I hope they are pleased. For now I am off to go outside, have a great day and enjoy this simple and refreshing recipe.

Mango Avocado Spinach Wrap:
1/2 cup spinach
1 mango
1 avocado
4 romaine lettuce leaves

Directions: Mash up the avocado, add a little sea salt if you like. Cut up the spinach into thin slices. Take your romaine leaves and put the spinach on first, followed by avocado mash and sliced mangoes. Enjoy!

  1. I would love to get my hands on all those mangoes. I just bought my first a couple days ago and fell in love. $3.50 for 12 is so inexpensive...and your wraps look great! :)

  3. Yay, a raw party! The Ani Phyo cake has been a hit with my non-raw friends. And who doesn't love just about any kind of pizza? Have a great time and big, big luck finding your perfect affordable home :)

  4. hi April, it's Ani. omg, you should totally make my Chocolate Raspberry Ganache Cake, and don't tell anyone anything about it being raw or vegan. They'll just love it. Or cobblers are good too. have a fun dinner party! btw, Ani's Raw Food Essentials will be avail April 1st, same month as your name....

  6. That mango looks fabulous! I want to make Ani's cake too, been eyeballing the recipe and trying to figure out an occasion - perhaps a Superbowl cake ;-)
