Chocolate Brownies
I know I have been missing in action lately! I have been eating raw foods and doing lots of green smoothies although I haven't been doing juicing. I just find that the smoothies are quicker to make and to clean up than the juices, although I love some green veggie juice! My favorite green smoothie I have been making lately consists of the juice from 4 grapefruit, 2 bananas, and 2 cups of spinach. This past week I visited Loving it Live, the raw food restaurant here in Atlanta. I haven't been here in such a long time but decided to go check it out. I must say I was very impressed that they added some new things to the menu, one of which is a philly cheese steak sand which! This was what I ordered and I was in HEAVEN! The wrap was made out of flax seeds and it was filled with portobella mushroom, green peppers, onions and a delicious cheese type of sauce! It was a winner. I am waiting for my friend to send me the pictures we took from the restaurant, when I get them there will be a nice review :-). If you live in Atlanta go and check them out, the food is delicious! So today is such a nice day here in Atlanta, so sunny! I got up to teach my pilates class for the morning and then I went for a 3 1/2 mile run. I haven't gone running in quite some time but the weather encouraged me to get out there! I want to keep it up and ideally would like to run 5 miles 5 x's per week! I need to be getting the cardio that running gives me. I came home and made these brownies. I am going to break into this tonight but I am sure it will be yummy:-). I hope you get a chance to try this out and look for my review of Loving it Live hopefully to come out soon!
Brownie Recipe:
3 cups of dried coconut flakes , 1 cup of walnuts, 1 cup of honey, 1 tsp sea salt, 3 tbsp raw chocolate powder
Mix the brownie ingredients in the food processor until fully combined together. Taste to see if you want them sweeter. Press into a pan.
Frosting : 2 cups of young coconut meat, 2 tbsp of coconut butter, 1/4 cup of honey, 2 tbsp of raw chocolate powder. Put into a vitamixer until it is creamy and thoroughly mixed together. Spread on top of the brownies. You can garnish with crumbled walnuts and cocoa nibs or whatever you like. Serve and enjoy!
I'm the same way with smoothies & juice. I love them both, but the smoothies are faster and less clean up. I do a lot of banana-mango-spinach.
