Crepes for Breakfast and Day 10 of 100% Raw
Eating 100% raw is becoming a breeze and these ten days have truly flown by! I was tempted to eat some potatoes last night but was able to change my focus and just enjoy the amazing salad I was already eating! Yesterday was nice because I got to spend the day with my brother and his girlfriend. I may be biased but I must say they are both completely amazing human beings! They are both beyond their years for college students! We went out to eat at a place in Atlanta called Lotta Frutta, which makes salads, smoothies and fruit cups. Then we climbed stone mountain and for dinner my brother and I made a giant salad (greens, avocado, shredded beets, shredded carrots, cucumber, tomatoes, orange, lemon juice, and raisins). I am incredibly proud of my brother and his girlfriend because they have changed the way they eat and now eat at least 50 % of their diet raw. They make big smoothies for breakfast, eat lots of salads and steam veggies for dinner. My brother is experimenting with the whole vegan thing as well recently. I want to do a guest post with them some day soon because I am just so proud of them for taking control of their health and eating so healthy!!
Okay, onto breakfast! I have been wanting to make crepes for such a long time and last night I decided I would make them so they would be ready for breakfast! I just finished eating them and thoroughly enjoyed my crepes! They are filled with coconut cream and topped with blueberry sauce! They were easy to make too! I hope you get a chance to try making them!
Banana Crepes:
Ingredients: 4 bananas, 4 dates, 1 cup of coconut meat, 4 tbsp honey, 1/2 cup blueberries, 1/8 cup of coconut water
Directions: Put the bananas and dates into the vitamixer and blend until smooth and creamy. Pour the mixture onto the dehydrator (make a thin layer). Set the dehydrator at 110 degrees for 8 - 10 hours. Take out and cut into desired shapes. Make the coconut cream filling out of the coconut and honey in the vitamixer. Fill the crepes. The blueberry sauce is the blueberries, honey and coconut water in the vitamixer. I put the blueberry sauce into a squeeze bottle so I could decorate my crepes. Share and enjoy!

ReplyDeleteHey,
ReplyDeleteReally enjoy your recipes! :)
But are the food still raw when you set the dehydrator over 100 C? Or is it Fahrenheit you are using?
Sorry if this is a stupid question, but I am from Norway, and not used to English recips.
