Noodle Dish and 38th Day Raw...



Yep, today is my 38th day eating 100% raw foods. This week at the grocery store I didn't buy any avocados. I am trying to cut back on eating so many mostly as an experiment into the 80 10 10 way of eating :-). I did buy bananas, cantaloupe, strawberries, 2 thai coconuts, grapefruit (box of 56 for ten bucks), minneola oranges, lemons, pink lady apples, tomatoes, zucchini, celery, broccoli, mushrooms and cucumbers. I made this chinese style noodle dish for lunch today. I found it to be tasty and filling. I kind of combined two recipes I have made in the past (my chinese food recipe with my spaghetti recipe to make this). I still have been making green juices about five times a week, in fact I need to make my daily green juice soon for today :-).
So, yes I do like eating raw foods but I will be honest sometimes I do have cravings for other foods. However, I like the benefits of eating raw so I use mental power to overcome cravings for the most part. Plus I am enjoying the food I am eating. I never go to bed hungry, I always feel satisfied. Last night Emily (Stephen's girlfriend) made raw banana ice cream. Let me just say WOW, I loved it!!! I can't believe I have been a raw foodie for so many years and never made banana ice cream! Well, after eating some I froze ten bananas last night and today for dessert I made my own banana strawberry ice cream! Let me just say it was awesome!!! I don't have a picture because I ate it too quickly but I will be making it again soon and will supply the recipe :-).

Noodle Dish:

Ingredients - 1 zucchini, 1 tomato, 1 orange, 2 heads broccoli, 1 package of mushrooms, 1 shallot, 1/4 cup of honey

Directions: Make your zucchini noodles with a spiralizer, or veggie peeler. Chop up your broccoil, shallots, and mushrooms and let them marinate in the honey with a squeeze of fresh orange juice. Place this mixture into the dehydrator for 3 hours at 115 degrees. When done put the broccoli mushroom mixture over the noodles. Finally, make a sauce out of the tomato and orange blended in the vitamixer and pour this on top. Eat and enjoy!

  4. april, i don't see tomato and orange in your ingredients list, but you mention making a sauce from them in your recipe...can you please help me out with how much orange and tomato i need? Thanks!

    Well, I always shop at the dekalb farmers market located on ponce near decatur square. They have the best prices on organic fruits and veggies around! Check them out!!

    You can definitely get some good deals there especially if you have some people to split the produce with :-).
