Spaghetti for Lunch and 20th day 100% raw
I actually made this recipe yesterday for lunch and enjoyed it so much that I decided to make it again today and add the pictures! So, today is my 20th day raw on my 60 day challenge and I find that it is easy. I haven't had any cravings in these past 20 days because I enjoy the food I am eating so much! I am also so excited that my brother and his girlfriend are going raw. They made spaghetti yesterday, check out their pictures on their blog here. One cool thing about that has been that we have been buying some produce in bulk and splitting it to save money. Last week we bought a giant box of bananas for twenty bucks split it four ways and it ended up being five bucks each for a lot of bananas. Sorry didn't count exact numbers but I still have like ten left and they are organic :-).
I got a lot of comments in my last post that my brother was lucky to have me as a mentor with going raw. However, I must say I am learning a lot from him and being challenged by him. You see my brother is eating straight up fruits and veggies, no nuts, no dried fruits, honey, oils or salt. He has been challenging me to do the same thing. As you know if you have been reading I have felt the conviction to go much lighter on all of those and stick with fresh fruits, veggies and fresh herbs. My challenge is that I love making all of the gourmet recipes! However, I am loving the simplicity of eating so light and fresh. This spaghetti recipe is different from any that I have ever made before. I always have used sundried tomatoes for my sauce and this time I didn't and the result? Amazing!!! I LOVE this recipe and it is actually 80 10 10! Anyways, hope you get a chance to try this simple and delicious recipe!!
Spaghetti:
1 zucchini
1 carrot
1 tomato
2 navel oranges
5 basil leaves
Directions: Make noodles out of the zucchini and carrots with your spiralizer or veggie peeler. Your spaghetti sauce is the tomato, oranges and basil leaves mixed in the vitamixer or blender. Combine the noodles with the sauce and enjoy!!
Mmmm. I love zucchetti. Never gets old. I also am loving how you are celebrating every day :-)
