Cilantro Pesto Noodles




Today for lunch I had this yummy cucumber cilantro pesto salad. I have been eating noodles made from cucumbers or zucchini almost every day it seems. I just really enjoy the taste and love that I get to still eat noodles (except these are unrefined and unprocessed!). It is my 51st day eating raw :-). Here is the recipe for my cilantro pesto noodle dish!

Cilantro Pesto Noodles:
1 cucumber
1/2 or 1 avocado
1/2 bunch of cilantro
6 baby tomatoes
1/8 shallot
sea salt to taste
1/2 head of lettuce

Directions: Make your pretty cucumber noodles with a veggie peeler. Make your sauce with the avocado, cilantro, tomatoes, shallot and sea salt (in the vitamixer until smooth). Place on top of your shredded lettuce and garnish with a few tomatoes!

    Good for you, I have trouble cutting out the salt. I love salt so much:-).
