Chocolate Pudding and Another 30 Day Raw Food Challenge...and Running

I have decided to do another 30 day raw food challenge. I know I keep doing these challenges but they seem to help me to stick to eating raw more than anything else does. Posting on this site helps to keep me accountable to eating raw foods. In addition to the raw food challenge I am going to aim to run 5 miles 5 times per week during the challenge. Today I woke up at 6:30 am to go running before my first teaching job. I went five miles in around an hour and I plan to do this every day. I am so lucky to live next to stone mountain park which has a wonderful running/ walking/ biking trail that is 5 miles long. It is very peaceful running here in the mornings, lots of trees, streams and I don't have to deal with noisy cars driving by me :-). I hope to continue the running and keep up this healthy habit. I will keep you posted on how it goes. Wish me luck :-).
I am still enjoying my teaching jobs. I do find teaching to be very fulfilling. I was shopping at the Dekalb Farmers Market the other day and I ran into one of my students who was saying how much she enjoyed having me as a teacher. That just means so much to me :-). This recipe is a simple chocolate pudding. It is nice to enjoy when you want something rich and chocolate!

Chocolate Pudding:

2 cups of coconut meat
2 tablespoons of honey
1 tablespoon of raw chocolate

Directions: Place the ingredients into the vita mixer and serve when finished!

  1. Good luck on your new raw challege! To be honest, I would find the running challenge a heck of a lot more difficult than eating 100% raw. =)

  2. Yeah, they are both a challenge :-). But eating raw is more so of a challenge for me :-).
