For the past couple of weeks I have been craving tabbouleh like crazy. I go shopping at the dekalb farmers market every week and they make it fresh there and sell it. This week I decided to make my own in a giant container so it could last me for the week. (To be honest it only lasted me two days, it is already finished today!)Parsley is rich in iron and can be used to improve conditions like anemia and urinary infections.
Some of the reasons I like to make it myself are 1. it saves money in the long run 2. I can use organic ingredients 3. I can make it without the bulgar wheat (making it a raw version).
Tabbouleh Recipe:
Ingredients - 3 bunches of parsley, 4 tomatoes, 2 cucumbers, 2 tbsp of olive oil, 3 lemons (juice of), fresh pepper, sea salt, handful of mint
Directions: Chop the parsley, tomatoes, cucumbers, and mint very fine. Mix them together and top with the olive oil, lemon juice, pepper and sea salt. Let it marinate for a few hours and then dig in!
yum! i love tabbouleh, and parsley is so nutritious, especially raw like this, this is a good way to get in some raw herbs without really noticing.

ReplyDeleteYes, I do agree it is a great way to get some parsley into your diet. And it is a good idea to add the hemp seed so it looks like the bulgar wheat. Thanks for the comments!
