Weekend Getaway and Vegetables for Breakfast






































One of my favorite places to take a vacation in Georgia is the North Georgia Mountains.  Blue Ridge is where I went this weekend with my boyfriend.  This city is an hour and a half drive from Atlanta and is an ideal and relaxing place to get away and get back to nature.  Some of the fun things to do in this area are white water rafting, hiking on the Appalachian trail, hiking to waterfalls, tubing, horse back riding, and just being in nature.  We stayed in a beautiful cabin with an awesome view of the mountains.  At night the stars were so bright.  The weekend was filled with nature walks, hiking, nights by the fireplace, playing games, soaking in the hot tub, and doing a lot of nothing as well.  I can't wait to plan another trip.

I took some pictures of my breakfast one morning.  I have been trying to squeeze even more vegetables into my day.  I love fruit salads but decided to add celery to my cut up apples and I thought it was pretty tasty.  I plan on adding this simple salad to my list of staple menu items.  I have to admit I got this idea from a salad one of my friends made (avocado, mango, pineapple, and celery).  That is a great combo as well and gave me the idea of adding bits of celery to my fruit.

The hash browns were yummy.  I used Korean sweet potatoes (we have a lot of Asian markets close to where we live).  Hash browns are fun to make because they cook up very quickly compared to the length of time it takes to bake them or roast them in the oven.  I used some organic ketchup on top of them to add the final touch.  I have to admit that I LOVE ketchup!  I love anything that I can smear ketchup onto.  I always get an organic brand with cane sugar, which makes me feel healthier about the whole addiction to ketchup.

The other pictures are some of the scenery in the area.  The mountain view is the view that we looked out onto from the deck of our cabin.  The river is named the Toccoa river and it was close to our cabin.  I love to hear the water rushing in the river.  It is such a relaxing sound to me!  I hope you had a nice weekend wherever you were!

Fruit Salad


1 apple
3 pieces of celery from the stalk


Directions:
1.  Dice up the apple and the celery into small pieces.  
2.  Mix together in your bowl and then eat and enjoy!

Hash Browns


2 medium sized potatoes
1 tbsp olive oil
sea salt to taste
ketchup to taste


Directions:
1. Grate the potatoes with a grater.
2.  Pour olive oil into your pan and stir fry the potatoes on medium to high heat.
3.  Add sea salt to taste as well as ketchup.  Enjoy!
