Banana Oatmeal Vegan Pancakes!






























For Easter I hosted a brunch at my house.  I served these wonderful banana oatmeal vegan pancakes along with hash browns and fresh squeezed orange juice.  I have to admit that I normally just eat fresh fruit for breakfast and I have not attempted to make vegan pancakes since becoming a vegan.  These pancakes are just as delicious as they sound!  I topped them with fresh diced mango, coconut butter, and honey.  They tasted more like a dessert!

 I originally found this recipe by searching for vegan pancakes on the internet.  I found so many options but the site Colourful Plate stood out to me the most and I took my inspiration from their vegan banana oatmeal pancakes recipe.  I made these pancakes again this weekend and I have decided that they are a good Saturday or Sunday lazy morning breakfast.

I did tweak the recipe just a little bit by using coconut milk instead of the soy milk.  I think you could also make these gluten free but I don't have a gluten free recipe right now.  I hope you get a chance to try out this recipe and let me know what you think!  I am in love with them!

Banana Oatmeal Vegan Pancakes:

Ingredients:
1 ¼ cup old fashioned oats
½ cup organic whole wheat flour
2 tsp. baking powder
½ tsp. sea salt
1 ½ cups coconut milk
2 ripe bananas
2 - 4 tbsp coconut butter for cooking and garnish

Directions: 
1.  Put the oats into a food processor and process until you have oat flour. Pour into a bowl. 
2. Blend the bananas in a blender until smooth and creamy.
3. Pour the pureed banana, wheat flour, baking powder, sea salt, and coconut milk into the mixing bowl with the oat flour.  Stir until you have smooth pancake batter.
4. Set the stove to medium heat and use the coconut butter to cook your pancakes.  You could also use olive oil or another oil.
5. Makes 6 medium sized pancakes.
6. Garnish with coconut butter, mango slices and honey.  Enjoy!

  3. I usually just eat fruit for breakfast, too. Pancakes are for special occasions or breakfast for dinner. Your recipe sounds delicious.
