You won't find any nuts in this pie!


Yesterday evening I decided to make another chocolate pie! This pie doesn't use any nuts whatsoever! One reason this is good is that one bag of dried unsweetened coconut flakes only costs me $1 compared to the price of almonds. I just had a piece today and it is yummy :-)! I am feeling tired today because I was at work all morning, then went straight to class and then practiced piano for an hour. Tonight I just want to chill but I still have two more scenes to memorize by next week and a monologue to memorize. I hope you all are having a great day :-).

Nutless Chocolate Pie:

Crust: 3 cups of dried unsweetened coconut 1 1/2 cup of dates (cut dates up small) 1/2 tablespoon of cinnamon 1 teaspoon of sea salt

Chocolate Filling:
3 avocados
1 cup of agave nectar
1 cup of raw chocolate nibs
1 vanilla bean
4 tablespoons of coconut butter
1 teaspoon of cinnamon powder

Directions: To make the crust use a food processor. Add all of the ingredients for the crust and process until it forms a ball. Spread the crust onto a pie pan. Wet your fingers with some water so that the crust won't stick to your fingers. For the filling, add all of the ingredients to the vitamixer and mix until creamy and smooth. Pour the filling into the pie crust and chill. After chilled sprinkle the dried coconut flakes on top of the pie.

  2. That sounds scrumptious, but I have a ton of almond pulp that I don't know how to use up. Any suggestions? =]

  3. I think you could use the almond pulp in the pie crust. Just replace the dried coconut in this recipe for the almond pulp:-).

  5. Oh what a super idea for a nutless pie! It looks delicious! I like that you use coconut and dates for the crust! And avocado always works wonders in raw chocolate pies!
