Saying Goodbye to Atlanta for the summer!




I am leaving Atlanta in two days and still haven't packed yet! I have been so busy! Today I got to hang out with some friends. I have a friend who has wanted to learn how to make raw desserts so we got together this afternoon and I showed her how to make chocolate pie. She is moving to LA and shouldn't have trouble finding more people interested in raw foods. Then, for dinner I went out to eat with more friends and that was great! Tomorrow is going to be pretty busy as well. Myself and another raw foodie friend have planned a raw potluck for the evening so it should be a fun time. I can't wait to go to New York and meet my raw food friends up there for lunch at Quintessence and dinner at Pure Food and Wine (which I will most definitely blog about)! For now I am going to give you the recipe for this chocolate pie and then shoot off to bed!

chocolate pie:

Crust:
1 cup of almonds
1 cup of dried coconut
1 1/2 cup of dates
1 tablespoon of vanilla

Filling:
1 cup of coconut butter
1 cup of agave nectar
1 vanilla bean
1 1/2 cups of raw cashews
1 1/2 cups of raw chocolate

Directions: Place the almonds and dried coconut in the food processor and pulse until a very fine powder. Add chopped up dates and process unti well combined. Press the crust into a pie pan. Place all of the filling ingredients into the vitamixer and mix until smooth and creamy. Spread the chocolate mixture into the pie pan and place in the freezer for 30 minutes and then it is ready to serve. Garnish with strawberries or whatever else you feel compelled to garnish with!

  1. good luck to you and your travels. i live in nyc and have been following your blog for a couple of months now. you are going to love kripalu and being in the berkshires for the summer - such an amazing and magical place. i'm sure you will discover the great barrington food coop. hope you enjoy the restaurants here in the city. i need to meet other raw foodie folks here.

    I am adjusting to Kripalu and I am sure I will love it. There is some great salad here and everything is organic which is wonderful. I have tons of picture from new york but have been so busy with orientations. I will post them by the end of the week for sure. Thanks to ya'll for reading my blog!
