Halloween Sugar Cookies!




We decorated our Sugar cookies last night and here is the final product! We made lots of different types of cookies but my favorites were the pumpkins and the ghosts. I think they are so cute! They taste very good too and I can't wait to make christmas sugar cookies now. I was afraid the cookies would turn out crumbly but they hold together very well and taste like a shortbread cookie.

Sugar Cookie Recipe:
2 cups of raw cashews 3 cups of dried coconut flakes 1 cup of date paste (dates and water in blender) 1 vanilla bean

Directions: Put the cashews and coconut flakes into a food processor until you have a very fine flour consistency. Make the date paste in a blender with a chopped finely vanilla bean. Mix together and roll out the cookies with a rolling pin and use a cookie cutter to make your fun shapes. Place the cookies in the dehydrator at 110 degrees for eight hours. They should be firm and hold together well when you take them out.

For the sprinkles we took finely chopped coconut and added carrot juice (1 - 2 tablespoons) to make it this pretty orange color. The green sprinkles are the same but with spirulina.

    These are too cute....and sooo easy!

    Recently I made raw choc chip cookie dough balls using cashews. They are so versatile, arent they!

  3. Thanks! Yes they are so easy! I do love cashews! I use them for desserts (cookies, pies, crusts, cakes) and for cheeses, they are amazing! Thanks for the comment!
