Yoga Retreat and Peanut Butter Cookies



So the retreat this weekend was fun. This is a sample of some of the body building we did with each other. I am to the right with blue pants on on the bottom. This is the yoga room that we practiced in which is so beautiful. All of the food served was vegan and always included a nice salad. I haven't juiced in a few days and just started back up again today. I made peanut butter cookies yesterday and I think they are a nice snack. I really want to focus on adding more veggie juices to my diet. I think I will try doubling the amount of juicing I am doing now. I feel that is really where the healing comes from, the green juices.
I have been reflecting on my life lately. I have done a lot of new things in the past year: got my yoga training, studied theatre, voice and piano for a semester in college, went to Kripalu and have started on building my yoga jobs up. A year ago around this time I was in my yoga training in Mexico and had just quit my job of four years. I left something with great pay and great benefits behind to search for something else. It has been an interesting journey and I think one of the most valuable things I have gained is my connection with other people. I feel that I have learned how to connect with other people in a much more meaningful way and that has added richness to my life. My friendships are more real and more fun too! I am still on this journey and actually am planning to do a bit more traveling this summer to Mauii to live and work on a meditation and yoga retreat. The detials are not definite yet though.

Peaunut Butter Cookies:

2 cups of raw peaunuts
2 cups of coconut flakes
25 organic dates
1/2 cup of water

Directions: Grind the peaunuts up until you get a fine powder (use a food processor). Put the dates in the vitamixer with water and mix until well combined. Mix all of your ingredients together to make your dough. Once thoroughly combined roll out your dough and use a cup to make circular cookies. Put in the dehydrator for 10 hours at 110 degrees.

  1. I got my yoga teacher training in Costa Rica in 2001. I was there for a glorious month. This pic reminds me of that special time. Also have been to Mexico couple times on yoga retreats.

  3. Wow, Costa Rica sounds amazing! I would like to go there! Yes, the cookies were good, they are all gone now as I shared them with some friend today.

    Yes, it does look dangerous but we had good spots and I felt safe:-). Thanks for the comment on the cookies!

  6. It seems like you are on a great adventure April and I'm so happy for you. It sounds like you are just exploring your life and finding it's meaning which is great!

    Those pb cookies sound delicious! I love peanut butter but haven't had it on forever. I am now an almond gal : )

  9. It makes around 20 cookies, also depending on how large or thick you make them.
