Christmas Goodies...





Today I have been busy in the kitchen all day making sweets. These are my christmas ornament cookies, chocolate macaroons and peppermint macaroons. Hope you are all having a cheery holiday season.
My sugar cookie base is the same one I used here for my halloween cookies. My frosting is coconut meat and honey mixed in the vitamixer. I don't have exact quantities but just went by taste. My sprinkles are made out of coconut flakes and juiced cranberrie s(red) and juiced spinach (green). For the macaroons, I used dried coconut flakes, dates (I put dates with water in the vitamixer until smooth and then added to the coconut flakes) and honey for taste and to help them hold together. I used raw chocolate powder (about 1/8 of a cup I am estimating) for the choccies and peppermint extract for the others.
In other news I am on my 8th day of eating 100 % raw and low to zero nuts. I did make an exception for the holidays and bought some cashews for my cookie base but all of my other holiday recipes won't be using nuts or oils at all. I am noticing really good results getting the nuts out of my diet. My hair is not as oily, don't need to wash it every day, my skin is clearer, extra five lbs lighter eating tons of fruits and veggies and even avocados and coconut meat. I feel that I am having an easier time staying raw lately as well which is nice.
We are going to Charlotte for Christmas and will get to see lots of family members. I am not really buying gifts this year but am going to be stocked with different goodies to share so hopefully they will be happy with that. I am excited to see lots of family members that I haven't seen in a few years :-). My thanksgiving meal plans are the following: green bean casserole, spinach souffle, cucumber salad, holiday chocolate pudding, and spiced apples with cream on the side. I am just going to make all of this ahead of time and bring it up with us to Charlotte and hopefullyl my aunt will have room for all of it in her fridge (crossing fingers).     No nuts and all these great findings/results...LOVE that. So happy for you! I am not huge into nuts either, I only use them in my raw baking, not just to eat. I cant do too many either.
