Spinach Salad for Lunch
This is my 20th day at eating 100% raw low nuts and seeds. This was my lunch today a salad made with avocado, green onions, sea salt, spinach and carrots. It is simple and very tasty and lately has been a staple of mine. I have been eating lara bars lately, I will have one or two per day sometimes so I am still eating some nuts and seeds but the amount has drastically reduced. I have been eating mostly fruit for breakfast lately grapefruit, satsumas, and bananas. Then for lunch I will usually have a nice big salad and then I just kind of snack the rest of the day eating whatever is raw and appeals to me. I feel completely satisfied and full. My agenda this week is to try out making a raw burger, I have some ingredients for it and hope to drag myself into the kitchen soon to try it. In other news I am teaching yoga around 16 classes per week, I just recently started teaching a pilates class which I enjoy because it switches things up a bit. Also, teaching pilates forces me to work out my core even more than doing yoga. I have to be able to talk while I am encouraging my students and so I need to be one step ahead of the game. I am teaching kids tennis, kids ballet and soon will be teaching kids yoga. One thing about working for yourself though is that you spend a lot of time in the car driving from one place to another. I am spending about twice as much money on gas right now with all of my driving around. Anyways, hope you all have a good day and wish me luck as I complete my 30 days 100% raw and then hopefully raw for the rest of the year. Glad for those of you who got some great deals at under the canopy!
Spinach Salad Recipe:
Ingredients: 2 cups of spinach
1 avocado
2 tablespoons of green onion
1 tsp sea salt
1 carrot
Directons: Smash up the avocado, green onion, and sea salt until all mashed togetehr. Mix in the spinach. Peel your carrot into thin strips to garnish your salad. Eat and enjoy!

ReplyDeleteThanks for all of the encoraging words everyone. So the changes I notice are clearer skin and feeling like I am at my perfect weight. Last week I remember feeling more tired than usual but don't feel that way this week at all. I definitely love eating raw food!
