Chocolate Ice Cream
I have been missing in action lately I know! Sorry about that. Mostly this is due to my diet changing to a very simple one rather than gourmet. I am eating a lot of salads and fruit smoothies, yum! My Internet has also been down all week and i just now up again! It is crazy how much you miss the Internet when you don't have it. I have been enjoying freezing my bananas lately and using them in smoothies and ice cream. Today I made this chocolate banana ice cream for mid breakfast. It is tasty for sure! I finished my 60 day raw food challenge and overall it went well. I did not stay on it 100% the entire time but I did for the most part. This week I am going to concentrate on having my green juices and lots of fruit smoothies!
This past Sunday I started running five miles every day and I did that four days in a row this week. I took a break today because it is rainy outside but will begin again tomorrow. That isn't something I have been able to do or wanted to do in a long time so that is a good sign. For the summer months I have a few fun trips planned, I am going up to the North Carolina Mountains over Memorial Day, going to to Rock Hill NC to visit family for a few days mid June and then I have my Montreal trip for two weeks in July ( I am really looking forward to that trip!). Chocolate Ice Cream:
2 frozen bananas
1 tablespoon of raw chocolate
Directions: Put the frozen bananas in your vitamixer, add the raw chocolate and mix until you get your desired consistency! Enjoy!!!

ReplyDeleteLooks delicious. I will have to try this on the side of a raw brownie next weekend. I'm going raw for the next 60 days in hopes of losing a little weight and just being healthy. Man I have to get some of that ice cream. Ice Cream is the hardest thing for me to give up.

Good luck with going raw. It is great for losing unwanted pounds, just stick with mostly fruits and veggies rather than gourmet and you'll be set :-).
Ice cream, yum. Especially for breakfast on a warm day :)

I've seen some ice cream recipes that use cashews. Do you need the nuts if you want to make strawberry icecream or something other than chocolate?

ReplyDeleteMy strawberry ice cream post is a few down from this one. I just use strawberries and bananas no nuts. You can use nuts but I am trying to avoid too many so bananas are perfect for me.

An update - so it was 90 degrees here yesterday - perfect for banana chocolate ice cream. I followed your very simple recipe and made some. I sprinkled the top with cacao nibs.
