Memorial Day Weekend in the Mountains...









I spent the past couple of days up in the North Carolina mountains at our family's cabin. I went with my family and it was a great weekend filled with hiking, yummy raw food, clean air, and wonderful spring water to drink! We go to a place called Bakersville, 2 hours north of Asheville and the only word to describe it is magical! It is so pure, clean and beautiful there and is so worth the six hour drive to get there. Our cabin is right next to a beautiful creek and I love listenning to the water rush by and watching the running water, it is very relaxing. For dinner one night I made this pasta dish (noodles out of cucumbers), the sauce was made out of avocado, spinach, sea salt, and onion. The tap water there comes from a spring out of the ground which comes from the creek outside the cabin (this creek is considered one of the three cleanest most pristine creeks in North Carolina).

  1. How lucky you are! I hope to have a cabin to escape to someday. The mountains of Bakersville look so pristine and rejuvenating. What a relaxing way to spend the long weekend. My family lives in the mountains of Oregon, that's where I grew up, and I feel so blessed to be able to go to there and recharge every now and then. Lovely photos. You look radiant.

    The noodles look good too, yum ;).
